Normally with juice I just throw everything I have into my juicer, and it turns out really tasty! But this time, I actually thought about it a bit. I went minimalist, using just 2 main ingredients plus ginger and lime for flavour. It was incredible! The most royal ruby red colour and a magically sweet and refreshing burst with every sip!
Not to mention super good for you - beets are full of essential vitamins, minerals and antioxidants. It's a powerful cleanser of the blood and contains nutrients that work to protect against heart disease and certain types of cancer. Watermelon is beautifully hydrating and alkalizing too!
Ingredients (serves 2)
3-4 beetroots (and stems if you have them!)
1 inch piece of fresh ginger
1/4 of a large watermelon
Juice the beets, ginger and lime. You can now pass your watermelon through the juicer or, blend it up in your blender along with the fresh pressed juice. I prefer this method to retain more of the watermelon fibre and minimise waste.
Serve over heaps of ice! YUM!
